Look forward to a one-night-only Four-Hands Dinner with Chefs Nancy Silverton and Will Goldfarb, where sustainability takes the spotlight with four diverse courses crafted from consciously-sourced produce. Highlights include Nancy’s Caesar with Pujadó Solano anchovies and AIR CCCC’s The Whole Grouper for Two, which utilises fin-to-gill techniques that include pressure-cooking the fish’s bones. Chef Will Goldfarb, acclaimed as the World’s Best Pastry Chef (World’s 50 Best Restaurants, 2021) will also be presenting his renowned dessert, The Sugar Refinery, which comprises soursop sorbet, belinjo sable, and Balinese meringue.
